A DCN Kettle fitted with the braising bar lends itself to an improved method of cooking in which ingredients can be partially cooked during a preliminary stage to improve flavour and colour. The radial stainless steel bars, attached to each arm of the agitator, coat a thin layer of the product onto the hot kettle surface to aid braising / caramelisation.

- Upgrade to steam valve simmer package to incorporate 2-stage steam selection to obtain optimum result.
